Roasted Apples and Brussies (Pomegranate Balsamic, Lemon Olive Oil)

A Feast of Fall flavors!!! Brussies and apples roasted in lemon olive oil with pomegranate balsamic and seeds and warm goat cheese.

Roasted Apples and Brussies

What you will need:

  • Brussels sprouts

  • Granny smith or any crisp and tart apple

  • Lemon Olive Oil

  • Pomegranate Seeds

  • Goat Cheese

  • Pomegranate Balsamic Vinegar

Clean brussels sprouts and cut into quarters.

Peel apples and cut into bite size chunks.

Toss brussies and apples liberally in lemon olive oil. Place in a baking pan and bake in 350 degree oven until brussies are slightly blackened and fork tender.

Remove from oven and sprinkle with pomegranate seeds and chunks of goat cheese.

Return to oven for about 3-4 minutes for goat cheese to warm and soften.

Remove from oven and drizzle liberally with pomegranate balsamic vinegar.

Serve warm!

The colors are so holiday-ish so this is a winner for seasonal meals.
