What to do when you discover you have too many carrots???

Well - there is always soup (with a little bit of smoke) but ... how about easy glazed carrots!

To make …

  • Peel carrots and cut into bite sized pieces.

  • Steam carrots until fork tender.

  • Drain carrots and place them in a saucepan over low heat.

  • Drizzle liberally with orange guava balsamic vinegar.

  • Add a tablespoon of light colored fruit jam (like peach, candy cane fig, or golden plum).

  • Stir over medium heat until well coated.

  • Serve warm, optionally with a dollop of sour cream on top!
