Sweet n' Tangy Strawberry Balsamic Crepes (Strawberry White Balsamic)

Mixing sweet and tangy white strawberry balsamic vinegar with fresh juice strawberries creates a delicious fruity saucy combination perfect for a slightly sweet treat.

What you will need (makes 4 crepes):

  • 2 cups sliced fresh strawberries

  • strawberry white balsamic vinegar

  • drizzle of honey

  • 1/2 cup flour

  • 1 egg

  • 1/4 cup each milk and water

  • 1 tablespoon of butter

  • 1 cup of ricotta cheese

  • powdered sugar

Marinate your strawberries. You will need 2 cups of sliced strawberries to make 4 crepes (1/2 cup for each crepe):

  • Coat sliced strawberries in enfuso strawberry white balsamic vinegar.

  • Add a generous drizzle of honey and set aside to marinade.

Meanwhile, make your crepes. The following quantities made 4 crepes.
First make the batter:

  1. Whisk together 1/2 cup flour and 1 egg.

  2. Gradually add in 1/4 cup milk and 1/4 cup water while continuing to whisk.

  3. Finally stir in 1 tablespoon of melted butter and a pinch of salt.

Next make the crepes:

  1. Heat a large round non-stick pan to medium. Brush the pan with extra virgin olive oil.

  2. Add 1/4 cup of batter to the pan and tilt the pan around in a circular motion so the batter spreads out in a circle.

  3. Cook until the bottom of the crepe is light brown, loosen the sides and then flip gently. Cook the other side the same amount and then remove from the pan.

While your strawberries marinate, they will create a sauce. Drain the sauce from the berries. Mix half of the sauce into 1 cup of ricotta cheese and reserve the rest.

Finally, assemble the crepes:

  • Spread 1/2 of a crepe with the ricotta cheese.

  • Cover the cheese with some marinated sliced strawberries.

  • Fold the crepe over.

  • Top with some of the reserved sauce and more berries.

  • Dust with sifted powdered sugar.

Substitutions:

  • You can substitute honey with a little sugar.

  • You can substitute ricotta with cottage cheese.
