Honey Ginger and Sesame Pan Fried Soba Noodles (Honey Ginger Balsamic-Seasonal)

I learned when making this that soba noodles are made with buckwheat which is generally considered to be gluten free. So that is a plus for this recipe.
It was so simple, yet very satisfying.

Cook soba noodles per package instructions and set aside. (I used about 1/4 of a package to make two servings.)
Make your dressing by whisking together:

  • 1/4 cup Honey Ginger Balsamic

  • 1/4 cup Extra Virgin Olive Oil

  • 2 Tablespoons of dark or roasted Sesame Oil

Saute cooled noodles in a heavy pan with olive oil and sesame oil together until they start to brown.
Add about 1/4 cup chopped raw cashews, a couple teaspoons of sesame seeds and the sauce.
The sauce will sizzle. Cook for a minute or two scraping any bits from the bottom of the pan until all ingredients are blended and the sauce thickens.
Stir in chopped scallions and serve.
