Avocado Bagel Toast with Garlic Greens and Salmon (Garlic Olive Oil)

Avocado toast is such a great recipe because of the endless variations. Here we change it by using a bagel. Then we go crazy with the toppings!

What you will need:

  • A bagel of your choice, we used a whole grain one.

  • A creamy ripe avocado, we prefer the haas variety but any creamy varietal will do.

  • Fresh spinach and micro greens (any will do, we used pea sprouts)

  • enfuso garlic olive oil

  • Baked salmon. We brushed some wild salmon with enfuso lemon olive oil, seasoned it wil salt and pepper and oven roasted it at 365 degrees about 20 minutes. We had some leftover and used it for our toast

  • Your choice of grated cheese. We used a Mexican blend with mild chedder and jack.

Directions:

  1. Saute your greens on medium heat in garlic olive oil until slightly wilted. Set aside.

  2. Toast your bagel.

  3. Spead the bagel with ripe avocado.

  4. Top avocado with saute’d garlic greens and then the baked salmon.

  5. Sprinkle with grated cheese and put back in the toaster for just long enough to melt the cheese

  6. EAT!
