Quick High Fiber Wrap (Elderberry Balsamic)

Quick lunch! A high fiber whole grain tortilla filled with goodies abnd your favorite vinegar, and rolled up to eat on the go.

Plenty of fiber, protein, fat, and acid for a nice balance of flavor and health.

Quick High Fiber Wrap

Start with a high fiber whole grain tortilla.

Spread it with hummus, any flavor will do.

Mash a ripe avocado and spread that over the hummus.

Take a few leaves of curly kale. Remove the center spine. Massage the kale, by balling it up and rolling it until it under your plams until feels less “crunchy”. Coursely chop it and layer it on top of the hummus.

Crumble feta cheese over the kale.

Layer a handful of chopped walnuts over the feta.

Drizzle it all with your favorite balsamic vinegar. (We chose elderberry.)

Roll up the tortilla and eat on the go!
