Cheesy Oregano Zucchini Boats (Oregano Olive Oil)

These boats featuring our oregano olive oil make great appetizers (1 per person) or can be a vegetable side to any main dish.

What you will need:
3-4 medium sized zucchini
2-3 medium sized ripe tomatoes - finely chopped and drained
1/2 medium sized white onion - finely chopped (substitutions include yellow onion, green onion, and shallot)
4-6 sprigs of Italian parsley - finely chopped
1 green olive per zucchini - sliced thin
1/2 cup grated Italian hard cheese blend (like Asiago, Romano or Parmesan)
enfuso oregano infused olive oil
Kosher salt and fresh ground pepper

Directions:
Cut the zucchini in half. Scoop out a bit of the center and chop it up. Mix the chopped zucchini center with the tomatoes, onions, parsley and 2 tablespoons of oregano olive oil. Fill the zuchini center with the mixture. Layer green olive slices on top. Season with salt and pepper. Place on a baking sheet.

Bake in a 400 degree oven for about 20 minutes until fork tender. Sprinkle on grated cheese, and put back in the oven for 2-4 minutes allowing the cheese to melt.

Remove from oven and drizzle with more oregano olive oil before serviing.
