What you will need:

  • 1/4 cup fresh lemon juice

  • 1 cup tahini (toasted sesame seed paste)

  • 2-3 tablespoons of ice water

  • 1/4 teaspoon flake kosher salt

  • 1 can or 15 oz of cooked chick peas (aka garbanzo beans), skins removed. (Note removing the skins is optional, but the hummas is much creamier when processed without the skins.)

  • 1/2 teaspoon cumin

  • 1/4 cup flavored olive oil

Using a food processor do the following:

  1. Blend the lemon juice , tahini and salt until smooth and creamy.

  2. Add the ice water and blend more until very creamy.

  3. Add chick peas and blend 2-3 minutes until again, very creamy.

  4. Add the cumin and slowly drizzle in your selection of flavored olive oil while blending. Note: You can use any individual oil flavors or even blend them. For example, Chili Cilantro or Tuscan Herb are great as they are. But you can also blend flavors, like 1/2 Lemon and 1/2 Garlic. Be as creative as you like!

  5. Taste the final product and decide if you want a little more salt, or zingy lemon, or if you want it thinner, add a little more ice water. Blend again and then you are done!

Remove from the food processor and place into a food storage container. Drizzle more olive oil on the top, and store in the fridge until you are ready to eat!
