Smoky Zucchini Parmesan (Smoked Olive Oil)

Saute breaded zucchini in smoked olive oil and then finish with a bit more for a rich smoky flavor and unique alternative to this traditional dish.

What you need

Smoky Zucchini Parmesan
  • 1 large zucchini in 1/4 inch slices

  • 1/2 cup seasoned bread crumbs

  • 1/2 cup Parmesan cheese

  • 1 egg beaten

  • Smoked Olive Oil

  • Salt and pepper

First, make an assembly line starting with your eggs, then bread crumbs, and Parmesan cheese. Then dip the zucchini slices in each bowl, coating them well.

Frying the coated zucchini slices

Next, cover the bottom surface of a seasoned or low-stick frying pan with smoked olive oil. Turn the heat on medium saute’ the zucchini slices until browned. Flip and saute’ the other side until browned. (About 2-3 minutes each side.)

Place finished zucchinis on a plate covered with a paper towel to help absorb excess oil.

Then remove to serving plate, dust with more Parmesan cheese and a slight drizzle of more smoked olive oil. Garnish with chopped parsley and/or paprika.

Snack on these before dinner, serve over rice or gains for a veggie dinner or serve next to a meaty main course.
