Pineapple Slaw with Sweet Corn and Sugar Snap Peas (pineapple balsamic vinegar, champagne vinegar)

Tangy sweet pineapple, raw sweet corn and crunchy sugar snap peas take a traditional slaw to the next level. A great side for anything from the grill.

For your slaw combine all of the following into a large bowl.

  • Small head of cabbage, sliced into narrow slivers

  • 2 cups of sliced sugar snap peas

  • 1 cup of raw corn sliced off of the cob

  • 2 cups of dices fresh pineapple

  • 1-2 carrots shredded

  • 1 cup of chopped raw peanuts

  • 3-4 slices of prosciutto ham, diced, saute'd until crispy and then chopped

To make your dressing combine the following in a bowl and whisk until creamy:

  • 1/2 cup olive oil mayonnaise

  • 1/3 cup pineapple balsamic vinegar

  • 2 Tablespoons champagne vinegar

  • salt and pepper to taste

Mix dressing and salad, refrigerate and serve cold with your favorite grilled item.

We had ours with some grilled bratwurst served with a side of Dijon wasabi sauce (equal parts white balsamic vinegar, sour cream, and chunky Dijon mustard with a dab of wasabi paste.)

Substitutions:

  • Use raw cashews instead of peanuts.

  • Use bacon instead of prosciutto.

  • For a tangier dressing reduce the mayonnaise and add more champagne vinegar. For a sweeter dressing, reduce the amount of champagne vinegar.
