Olives - Cucumber Stuffed California Mission

This unique olive is the result of many layers of artisan food creation.

First, our California giant mission olives are pitted and salt-cured for 10 months to a year to produce a rich tasting olive with creamy texture and no chemical after taste.

We hand stuff each olive with a crispy and tart pickled tiny cucumber (also known as a cornichen).

We place each stuffed olive in our trademark brine based on hand-crafted California champagne vineger, basil, garlic, a hint of hot peppers, and just the right amount of kosher salt. Our brine pulls the salt from the olive creating a perfect balance of refreshing single-varietal vinegar and salty briny olive.

We love how these olives burst with flavor, are creamy and al-dente to the tooth on first bite but finish with the cruch of cucumber in the center. The vinegar has a refreshing finish on your palate with only the reminiscence of olive after a few seconds and leaving you ready for just one more!
