We set aside some of our central coast arbequina fresh from the 2017 pressing and bottled it before racking. This fresh oil was from ripe olives allowed to mature for a rich fruity flavor and buttery overtone. The finish is long with light pepper and buzz at the end but without the bitter of a very early harvest. There will be bits of sediment in this oil so don't worry if you see it settling on the bottom. That's how you know this was bottled fresh from pressing. We have only a limited amount that we saved, so grab this while you can!
